Grilled Salmon

My favorite way to grill salmon, using some secret ingredients!

Marinade: (serves 4)

  • Salmon steaks
  • 1/3 c. fresh-squeezed orange juice
  • 1/3 c. soy sauce
  • 3 Tbsp. Crunchy Peanut butter
  • 3 Tbsp. catsup
  • 1 Tbsp. honey
  • ½ tsp. minced ginger
  • 1 clove garlic, minced

Directions:

Whisk ingredients and pour marinade over salmon in a large ziploc plastic bag. Marinade an hour or two (no more--as marinade can precook any fish). Grill uncovered over hot coals for 5 min. Turn. Brush with marinade; grill 5 min. or until fish flakes easily.

Glaze (opt.): Left-over marinade can be brought to a boil & cooked for a few min. until it slightly reduces. I garnish salmon with glaze and scallions atop on a bed of yummy saffron rice.
